Vegetable Masala Sambar

Method

Step 1: Clean and wash thuar dhal, cook with water, turmeric powder and 1 tsp of oil until tender and no grain is seen.
Step 2: Cut other vegetables finely and steam it. Except drumsticks.
Step 3: Soak tamarind in hot water in half an hour and squeeze out the pulp.
Step 4: Cut drumsticks into small pieces and keep them in hot water for 15 minutes, take them out and keep aside.
Step 5: Heat oil and fry the onions until pink colour.
Step 6: Add tomatoes and tamarind pulp, stir it. Put the boiled vegetables, drumsticks and fry them. Add ground paste and keep on stiring on low fire.
Step 7: Add boiled dhal and asafoetida, salt. Add 1 cup of water and give them a boil.
Step 8: Finely heat 1 tsp of oil, season with mustard seeds till start popping, add 2 whole dry red chillies until brown. Pour over Sambar.
Step 9: Garnish with coriander leaves and serve sizzling hot.

Ingredients

  • Thuar dhal (Red green dhal) - 1 cup
  • Onions - 2 big (cut finely)
  • Tomatoes - 2 big (cut finely)
  • Drumsticks - 2
  • Cauliflower - 200 gms
  • Brinjal - 2
  • Carrots - 2
  • Red pumkin - 100 gms
  • Green chillies - 4
  • Tamarind - 1 big lemon sized
  • A pinch of asafoetida
  • Oil - 2 tbsp
  • Salt to taste
  • Mustard seeds - 1/2 tsp
  • Grind together

  • Red chillies - 3
  • Dhania - 1 tsp
  • Black pepper - 1/2 tsp
  • Garam masala powder - 1/2 tsp
  • Bengal gram dhal - 2 tsp
