Vegetable Stew

Method

Step 1: Slice onions and slit the green chillies.
Step 2: Grate coconut, add little water and grind it. Take two extract (thin and thick)
Step 3: Cut all the vegetables into even sized cubes. Cut the cauliflower into smaller flowerettes.
Step 4: Boil all the vegetates in salted water till three - fourth done. Remove drain and keep aside.
Step 5: Heat oil, add ground mixture and onions, fry till the onions turn translucent.
Step 6: Add curry leaves and the boiled vegetables and saute for a couple of minutes.
Step 7: Add thin coconut milk, salt and keep simmer, stir well. Boil till gravy becomes thick.
Step 8: Remove from fire and add immediately thick coconut extract. Stir lightly, springle the garam masala powder and coriander leaves.
Step 9: Serve with hot Appams.

Ingredients

  • Carrot - 3
  • Beans - 100 gms
  • Potatoes - 3
  • Chow chow - 1
  • Cauliflower - 1 small
  • Green peas - 1/2 cup
  • Onions - 3
  • Green chillies - 3
  • Coconut - 1 medium
  • Oil - 3 tbsp
  • Salt to taste
  • Grind together

  • Grated coconut - 2 tbsp
  • Red chillies - 4
  • Garlic - 4 flakes
  • Ginger - 1 small pieces
  • Cumin seeds - 1/2 tsp
  • Dhania - 1 tsbp
  • Garam masala powder - 1 tsp
  • A few spring of curry leaves.
